Apple Pecan Cake

3 eggs                                                              
1 tsp baking soda
2 cups sugar                                                   
1 tsp salt
1 cup vegetable oil                                         
2 tsp cinnamon
2 tsp vanilla                                                    
4 cups peeled, chopped apples
2-3/4 cups flour                                              
1 cup chopped pecans

Beat eggs until medium thick and pale.  Add sugar, oil, vanilla.  Add combined flour, salt, cinnamon and soda.  Bake in 10” tube pan at 350º for 1 hour and 25 minutes.  Cool in pan 5 min.
