Sweet Potato Biscuits

¾ cup cooked mashed sweet potatoes
½ cup butter melted
2 Tbs brown sugar
2 cups flour
2 tsp baking powder
1 tsp salt
½ teaspoon baking soda
¾ cup buttermilk

Combine sweet potatoes, butter and brown sugar; beat at medium speed until well blended.  Combine flour, powder and salt, stirring well.  Dissolve soda in buttermilk.  Combine all ingredients, stirring just until dry ingredients are moistened.  Turn dough out onto a floured surface and knead lightly 6 to 8 times.  Roll dough to ½” thickness; cut with a 1-1/2” biscuit cutter.  Bake at 400º for 18-20 minutes.  Makes about 2 dozen.
