Orange Rolls


Mix together 1 cup scalded milk and ½ cup shortening, 1/3 cup sugar and 1 tsp salt in large mixing bowl.  Cool to lukewarm.  Soften 1 package of yeast in ¼ cup warm water and add to mixture.  Add 2 well beaten eggs, ¼ cup orange juice and 2 Tbs grated orange peel.  Beat well.  Add 5 cups sifted flour and mix into a soft dough.  Cover and let stand 10 minutes.  Knead the dough 5 to 10 minutes.  Place in greased bowl turning over once to bring greased side up.  Cover with a damp cloth and let rise in a warm place until double (about 2 hours).  Punch down and let stand for 15 minutes.  Cut in low knots.  Let stand until double.  Bake at 400ºfor 12 minutes.

Orange Icing:  Blend 2 Tbs orange juice, 1 Tbs grated orange peel and 1 cup confectioners sugar.
