Peanut Butter Cookies

½ cup crunchy peanut butter                         
1 egg
½ cup butter                                                   
½ tsp vanilla
½ cup sugar                                                    
1 cup sifted flour
½ firmly packed light brown sugar                
½ tsp baking soda
½ tsp salt
 
Blend peanut butter and butter.  Cream mixture with sugars and salt thoroughly.  Beat egg and vanilla into mixture until light and fluffy.  Sift together flour and soda.  Gradually blend into creamed ingredients.  Form into 1” balls.  Place 2” apart on ungreased cookie sheet.  With floured fork, make a criss-cross design to flatten cookies.  Bake at 350º for 18-20 minutes or until light brown around edges.  Makes 3 dozen large cookies.
