Irish Bread

2 eggs                                                               
3 Tbs sugar
2 cups buttermilk                                              
½ tsp baking soda
4 cups flour                                                      
1 tsp caraway seeds
2 tsp baking powder                                         
½ box raisins
½ tsp salt

Grease loaf pan and preheat oven to 375º.  Beat eggs and buttermilk in a small bowl with whisk until thoroughly blended and set aside.  In a large bowl, combine flour, salt, baking powder, baking soda and caraway seeds.  Mix thoroughly with hands.  Add raisins and mix again.  Add egg/buttermilk mixture.  Mix well by hand with spoon until mixture is thoroughly combined.  Consistency should be thick and not easily poured.  If too thin, add a little more buttermilk.  Spoon into loaf pan and run a knife through the batter.  Bake for about one hour and 15 minutes until the top of the break is crusty.  Cool.
