Basic Muffins

2 cups flour
¼ cup sugar
3 tsp baking powder
½ tsp salt
1 egg well beaten
1 cup milk
¼ cup oil

Combine first four ingredients.  Stir in remaining ingredients until just moistened.  Spoon into muffin cups 2/3 full.  Bake at 400º for 20-25 minutes.  Remove immediately from pan.

For richer muffins:  increase sugar to ½ cup, oil to 1/3 cup and decrease milk to 2/3 cup.  Bake at 400º for 15-20 minutes.

For blueberry muffins:  gently stir 1 cup fresh or ¾ cup frozen blueberries into rich basic batter.
