Sugets

4-5 cups flour
4 pounds Idaho potatoes
2 eggs
salt
 
Sprinkle a little flour on board, mash potatoes in center.  Beat eggs, add flour and salt and mix.  Continue to add flour and knead until firm and smooth.  Roll about 1” thick, cut in strips and into 1” pieces.  Punch in center.  Cook in boiling water about 10 minutes.  Rinse in cold water if soft.
