Quiche Lorraine

12 slices bacon (1/2 pound)
1 cup shredded Swiss cheese (4 oz)
1/3 cup minced onion
4 eggs
2 cups whipping cream
¾ tsp salt
¼ tsp sugar
1/8 tsp cayenne pepper
Pie crust
 
Bake at 425º for 15 minutes.  Reduce oven to 300º and bake 30 minutes or until knife inserted 1” from side comes out clean.  Let stand for 10 minutes.

Sausage Souffle

Put 6 slices cubed white bread in 9x13 casserole.  Brown 1 pound mild sausage in skillet; drain.  In mixing bowl, beat 5 or 6 eggs; add 1 cup grated sharp cheddar, 1 tsp dry mustard, ½ tsp salt, 2 cups milk and 1 can cream of mushroom or celery soup.  Add browned sausage to mixture and pour over cubed bread in dish.  Refrigerate overnight.  Put in cold oven and bake at 350º for 1 hour (or until set).  Serves 6-8.

Sausage Noodle Casserole- Molly

1 pound sausage (hot), cooked
1 can tomato soup
8 oz sour cream
8 oz seashell noodles, cooked
 
Combine and bake 30 minutes.

Pork Chops

3-4 pork chops, browned on both sides
½ cup pineapple juice
dash Worcestershire sauce
salt and pepper
 
Cover and simmer for 30 minutes.  Add water, if necessary, to keep chops covered with liquid.
Serves 2.

Marinated Chicken Salad

5 cups cooked, diced chicken
2 Tbs vegetable oil
2 Tbs orange juice
2 Tbs vinegar
1 tsp salt
1-1/2 cup small green grapes, cut
1-1/2 cup celery, chopped
13 oz can pineapple chunks or tidbits, drained
11 oz can mandarin oranges, drained
½ cup slivered almonds
1-1/2 cup salad dressing
3 cups cooked rice (optional but good)
 
Mix and set aside the first five ingredients several hours or overnight in refrigerator.  Add the rest.  Mix and chill.  Serves 8.

Chicken and Rice

4 chicken breasts
1-1/2 cups boiling water
2 cans cream of chicken soup
1-1/2 cups rice (Uncle Ben’s uncooked)
2 Tbs butter
salt and pepper to taste
 
Butter pan, add soup, rice, chicken and water.  Cover.  Cook one hour.  Serves 4.

Sesame Shoyu Chicken

For five pounds of meat:
 
1 cup sugar
1 cup Shoyu
2 Tbs Hoisin sauce
Fresh ginger and garlic
Sesame seeds
Green onions
 
Marinate overnight.
