Beef with Green Peppers

1 pound beef, cut in strips
1 Tbs paprika
2 Tbs butter
2 cloves garlic
1-1/2 cup beef broth
1 cup sliced green onions
2 green peppers, cut in strips
2 Tbs cornstarch
¼ cup each water and soy sauce
2 large tomatoes, cut in eighths
3 cups rice
 
Sprinkle meat with paprika and allow to stand while preparing ingredients.  Brown meat in butter, add garlic and broth, cover and simmer for 30 minutes.  Stir in onions and green peppers, cover and cook for 5 minutes.  Blend cornstarch, water and soy sauce.  Stir into meat.  Cook until thickened – about 2 minutes.  Add tomatoes.  Serve over rice.
